INFUSIONS AND FOOD
Tea. It’s the second most consumed beverage in the world to water.
There are a lot of reasons for that.
Good solid tasty reasons, both exhilarating and calming. Not to mention grounded and day-dreamy.
Platform T will show you all of these reasons. All of them.
You’ll get there from here. A pot, a cup, a sip at a time.

We experience a lot of great teas in our travels. And as much as we’d like to bring them all back, we are a
small company, and limited to a select few. An amazing few, actually.
This high quality black tea from the Mangalam Estate is comprised of large leaves with golden tips – like halos. Thus the dark amber cup with a slightly malty finish and hint of spice is one to behold. Your taste buds will bow in their honor.
A most unusual tea from Fu Ding Da Bai Cultivar, it is both a white tea but oxidezed. Never mind the contradiction. Just enjoy the amber liquor and the slightly woody notes. You’ll believe in fairy godmothers.
This is a pluck of the bud and the first leaf. Its discovery was commissioned by an emperor who asked for a black tea that would never become tannic or bitter. The result is this beautiful golden streaked tea, with a lovely reddish liquor. Strong and robust. Never tannic, but elegantly sweet from first to finish.
GOLDEN MONKEY SUPREME
Said to be created by the Emperor himself, this is a high grade tea for the ages. Supreme plucks of the bud and the first leaf yield a gold streaked tea with strong flavor and low tannins. Taste the burnt apricot with a blush of sweetness and a nutty finish. Note: An overbrewed Golden Monkey is a happy monkey. He can’t be overbrewed. Do the right thing, enjoy.
Way back when, yellow was the color of the Emperor. So this was the drink of Emperors. The leaves are minimally handled, with minimal oxidation. The result is a very mellow taste that reminds you of a green tea, but ever so slightly astringent, with an earthy butter finish.
ULTIMATE GOLDEN MONKEY
Legend has it that this tea was commissioned by the Emperor who wanted a highly flavorful black tea without the tannins. He succeeded. What followed was a tea that is exceedingly rare and of the highest caliber. Hints of apricot and a touch of smoke. This tea was served when the President of China visited the White House in 2011. So you know it’s fancy.
FIRST FLUSH DARJEELING
First harvest of the year from the Soom Estate. Lively and fresh, it is a light brown tea with muscatel notes. First come, first served, first delight.
If you only knew what goes into this tea. Starting with leaves picked in the spring and set aside till summer. It waits for the night-blooming Jasmine which blooms only in the summer. They are layered together night after night with this nocturnal bloom. Each is then hand rolled into the light green pearls.
This bright Japanese green tea is covered with shade for its final weeks to concentrate the chlorophyll. It has the aroma of freshly mown grass. Slightly sweet. No harshness.
A lightly oxidized oolong from Fujian, China, its complex verdant texture is blended with that of hand picked blossoms of the Jasmine plant. Smell the tea. Drink the flowers.
PUERH CAVE 1995
As dark as the caves where it was traditionally held, this aromatic black tea features complex earthy tones and a woodsy taste. Aging yields a smooth, slightly musky finish that lingers, proof that things really do get better and more delicious with age.
SUPER BAI MU DAN
Bai Mu Tan, or White Peony is exquisitely delicate, but don’t worry, she won’t break. She’s come thousands of miles far from fine origins of a single bud and two gently handled leaves. Note hints of melon and apricot and just how special you feel.
All bud, no leaves, this is the rarest and most revered Chinese white tea. It was, of course, the tea of the Emperor, plucked by virgins donning white silk gloves. You’ll love its delicate flavor with blushes of melon and apricot.
